This Shortcrust pastry recipe is the classic pate sablée.
This pastry is simple and perfect for your custard type of pies, another of my go-to recipes for nice pies.

  • 250 g flour
  • 125 g sugar
  • 150 g butter
  • 1 egg


  • Gather the ingredients. mix the flour, the sugar, and a pinch of salt together,
  • then mix in the soft butter until you get a sand-like consistency.
  • mix in the egg until you have a ball of dough
  • like this!
  • Flaten it, film it, and let it rest in the fridge for 20 min.
  • then roll it and place it in the mold. Et voilà!
