This Breton Biscuit is a delicious french salted butter cookie from the Brittany region.
These Sablé are some of the french most popular butter cookies to have with your coffee, tea, or hot chocolate and are often chosen by children with a simple glass of milk.
This Breton biscuit is a sweet and salty cookie that tastes like holiday afternoons in France. It is comfort food with a "je ne sais quoi".

Ingredients
 
 

  • 200 g salted butter
  • 3 egg yolks + 2 for a golden crust
  • 120 g sugar
  • 370 g flour

Instructions
 

  • Prepare your ingredients and start by mixing the egg yolks with the sugar and butter.
  • Add the flour and salt to the mix until you get the right consistency.
  • Make a ball and flatten it. Then cover it in plastic wrap and let it rest for 20 min, After that, you can preheat your oven to 325°F to 350 °F or to gas mark 4. (180°C, Thermostat 6)
  • You can then roll your dough and cut the cookies with a cookie cutter between 4 and 6 mm.
  • Paint them with the remaining egg yolks. You can do another coat after 5 min to make them extra golden and finally, you can mark them with a fork.
  • Let them cook for around 12 min or look out for the edge to be golden.

Notes

If you can find salted butter you can use it instead and not add the salt. The result will be different since the fleur de sel doesn't mix well it appears more at random spots and gives a sudden kick to the cakes.
