Tapenade

Magalie
This Tapenade recipe will bring you to the Provence countryside.
This is a classic olive spread to have an appetizer during the summer times.
On some toasted bread with fresh garlic scrubbed on it for the most authentic experience.
It would be typically accompanying some cold drinks like a pastis or a glass of white wine or rosé.
It can also be used for canapés or in recipes like the pissaladière.

Ingredients

  • 2 cups pitted black olives
  • 1 fresh garlic pod
  • 5 anchovy fillets
  • 1 teaspoon capers
  • 3 tablespoons oliven oil
  • 6 drops lemon juice

Instructions

  • Gather the ingredients.
  • Remove the garlic germ.
  • Use some sort of mixer. Here I am using a mini kitchen tool. You can choose a blender if you want the paste smoother or else.
  • Mix the ingredients together.
  • You can add some lemon juice or rosemary and thyme.
  • Mix it until it combines as a paste and the consistency that you like. Et voilà!
